How is the ideal nose shape chosen?

He performed a closed rhinoplasty, which means that there are no external scars despite the patient having a severely deviated septum due to a fall whilst riding a horse. He uses the Piezo-electric device which allows him to cut and reshape the bone without bleeding and very few, or no, bruises.
